Everything here keeps indefinitely, which makes it the meal for the night you have not shopped and cannot face going out.

Equipment

  • Large pot for pasta
  • Colander
  • Wide sauté pan or skillet
  • Wooden spoon or fork

Ingredients

Instructions

  1. Cook the pasta in well-salted water. Before draining, save a mugful of the cooking water.
  2. While it cooks, warm the oil in a wide pan and add the garlic for one minute — do not let it brown.
  3. Add the drained beans and crush about half of them against the side of the pan. This is what makes the sauce creamy without cream.
  4. Add the tuna with its oil, the lemon zest and a good grind of pepper. Warm through.
  5. Tip in the drained pasta with a splash of the cooking water and toss hard until it comes together.
  6. Finish with lemon juice and parsley if you have it.

Notes

  • Crushing the beans is the step worth not skipping. Without it you have pasta with things in it rather than a sauce. For younger children, hold back the lemon and pepper and add at the table.
