The Everything Traybake Formula Recipe
Once you know the formula you stop needing traybake recipes. It is five components and two oven stages, and it absorbs almost anything in the fridge.
Equipment
- 2 large rimmed baking sheets (sheet pans)
- Parchment paper
- Chef knife & cutting board
Ingredients
Instructions
One protein — sausages, chicken thighs, halloumi, a tin of drained chickpeas.
One hard vegetable — potato, sweet potato, carrot, squash. Cut into 2cm pieces.
One soft vegetable — peppers, courgette, red onion, tomatoes. Cut larger.
Fat — two tablespoons of oil.
Flavour — a teaspoon of dried herbs, smoked paprika, or a spoon of harissa.
- Heat the oven to 200C fan.
- Toss the hard vegetable with half the oil and seasoning. Roast 20 minutes alone — this is the step that makes the difference.
- Add the protein, soft vegetable, remaining oil and flavouring. Toss on the tray.
- Roast a further 20–25 minutes until everything is browned and the protein is cooked through.
Notes
- Use two trays rather than crowding one. Crowded vegetables steam instead of roasting, which is the most common reason a traybake is disappointing. Always check meat is cooked through before serving.
- Plan a week of these with the meal planner.
