Freezer Pancakes You Toast Straight From Frozen Recipe
The point of these is not the pancakes. It is that on a Tuesday you take two out of the freezer, put them in the toaster, and breakfast is finished before anyone has asked a question about it.
Equipment
- Large non-stick frying pan or griddle
- Mixing bowl & whisk
- Spatula
- Baking sheet & wire cooling rack
Ingredients
Instructions
- Whisk the flour, baking powder and sugar in a bowl.
- Beat the milk and eggs together, pour into the dry ingredients and whisk just until combined — lumps are fine, over-mixing makes them tough.
- Cook spoonfuls in a lightly buttered pan over medium heat until bubbles appear on top, about two minutes, then flip for one more.
- Cool completely on a rack. This matters: warm pancakes steam and freeze into a block.
- Freeze flat on a tray for an hour, then transfer to a bag.
To serve
Straight into the toaster from frozen on a medium setting, or thirty seconds in the microwave for a softer result.
Notes
- They keep about two months. Freezing them flat first is what stops them sticking together.
