Instructions
- Marinate the chicken: In a medium mixing bowl, whisk together the BBQ sauce, Worcestershire sauce, Dijon mustard, olive oil, paprika, onion powder, black pepper, dried herbs, and honey until smooth. Add the boneless chicken pieces and toss thoroughly until every piece is well coated. Cover and refrigerate for 2–6 hours (you can also freeze the chicken directly in the marinade for meal prep; thaw completely in the refrigerator before cooking).
- Preheat the oven & prep the pan: Preheat your oven to 375°F / 190°C. Line a rimmed baking sheet with parchment paper or foil and grease lightly.
- Bake the chicken: Lift the chicken pieces from the marinade, letting excess sauce drip off. Arrange the chicken in a single layer with space between each piece. Bake for 15 minutes, remove the tray to turn each piece, then return to the oven for another 5–8 minutes (or until the thickest part reaches 165°F / 74°C internally).
- Broil for a caramelized glaze: For a glossy, stickier caramelized exterior, switch your oven to Broil for 30–60 seconds at the end. Watch continuously because the honey and BBQ sauce can burn quickly. Remove from the oven and let rest for 5 minutes before serving.
- Cook the warm mixed vegetables: Place 2 cups frozen mixed vegetables directly into a large frying pan or skillet. Add 2 tablespoons of water, cover, and cook over medium-high heat for 3–4 minutes. Remove the lid and cook for another 1–2 minutes so excess moisture evaporates. Drizzle with 1–2 tsp olive oil, season with black pepper and optional garlic powder, and sauté for 2–3 minutes until hot, tender-crisp, and vibrant.
- Toss the fresh lemon salad: In a salad bowl, combine 2 cups crisp salad greens, sliced cucumber, halved cherry tomatoes, and thinly sliced red onion. Whisk 1 tbsp fresh lemon juice, 1 tsp olive oil, black pepper, and a tiny pinch of salt. Do not dress the salad until right before serving to keep the greens crisp.
- Whisk the Lemon-Dijon yogurt sauce: In a small bowl, stir together ½ cup plain yogurt, 1 tbsp mayonnaise, 1½ tsp fresh lemon juice, ½ tsp Dijon mustard, black pepper, and optional onion powder, pinch of salt, or ½ tsp olive oil until velvety and smooth. Chill in the refrigerator for 10–15 minutes to let the flavors marry.
- Warm garlic bread & assemble: Prepare garlic bread according to package directions (if baking at 375–400°F, place it in the oven during the last 5–10 minutes of chicken baking so everything finishes hot together). Plate generous portions of Honey BBQ Worcestershire chicken as the centerpiece, warm mixed vegetables, fresh crisp salad, and warm garlic bread, with 2–3 tablespoons of Lemon-Dijon yogurt sauce alongside for dipping or drizzling.
Notes
- Watch the broiler closely: Because BBQ sauce and honey contain natural sugars, they caramelize rapidly. Keep your eyes on the chicken during the 30–60 second broil to achieve a gorgeous glossy glaze without scorching.
- No added salt needed in the marinade: The combination of barbecue sauce and Worcestershire sauce brings plenty of savory richness and natural seasoning.
- Freezer meal prep friendly: Portion the raw chicken directly into a freezer bag with the marinade and freeze for up to 3 months. Thaw overnight in the fridge before baking.
- Dress the salad at the last minute: Hold off on dressing the salad until right before plating so the cucumbers and greens retain their fresh crunch.
- Taste yogurt sauce before adding salt: The chicken delivers plenty of savory depth, so taste your sauce first to see if that extra pinch of salt is necessary.
